Sousse is more of a working town - warts and all. Hammamet is smaller and would say more tourist/holiday resort. PEK/Yasmine Hammamet are purpose built tourist resorts which to some can be bit sterile. Depends which more important to you - being closer to Tunis or El Jem/Monastir.
